Fava beans cooked in crushed tomatoes, with garlic confit, over white rice

Details and recipe below the image.

fava beans and garlic confit
The garlic, slowly cooked in olive oil compliments the soft and flavorful beans

This is a rather basic dish, made with things I happened to have at home (crushed tomatoes, a can of preserved fava beans, spices, garlic and rice which we always have plenty of).
The evening was rather cold so the spouse and had a great time using this nice variation on a simple type of comfort food to heat up and fill up.

You'll need the following ingredients:
  • olive oil
  • rice
  • garlic
  • black pepper
  • salt
  • cumin
  • turmeric
  • cinnamon
  • precooked fava beas ( canned are better than frozen because they're soft enough to begin with -thus shortening the preparation time)
  • a large can of crushed tomatoes
Put desired amount of garlic (I love garlic, so I use lots of it, but the optimal serving form is about three-four cloves of garlic per person, per plate) in a pot with the preheated oil.
Make sure to not burn the oil, it shouldn't be smoking, keep the flame low.

Cook the garlic for as long as possible, or until it's soft enough. Some people choose to do this for hours, but 5-10 minutes is sufficient since the garlic is later cooked in the sauce as well.
When you're tired of  preparing the garlic confit - increase the flame, add spices (to taste) into the oil ad cook till you feel the aroma (in under a minute if the correct temperature is applied, don't burn the spices!).

Add the crushed tomatoes.
After heating the sauce properly (to a boil if  you mix it - otherwise it'll burn) add the beans.

Start cooking the rice.
As most rice types take up to 15 minutes to cook - you'll have both the rice and the beans ready in about the same time.

Place a generous quantity of rice on a plate, add the beans on top and make sure to have enough cloves on the top - for decoration. You can also garnish (and add flavor with some freshly chopped parsley on top).

Bon appetite!
